			<content:encoded><![CDATA[<p>During the summer, the days are sometimes just too hot to be craving a hot cup of coffee. That&#8217;s when it&#8217;s time to <strong>make iced coffee</strong>. My husband loves to drink coffee all day long, so that was my inspiration to come up with some recipes for iced coffee. Along the way, I discovered that I could save some money on those little bottles of pricey Cappuccino he loves so much, recreating a close approximation with a simple recipe. Here, I&#8217;d like to share some of the many ways I found to make iced coffee, with a number of variations. First, we&#8217;ll go over the basic process of making iced coffee and then get into specific recipes that are easy, economical and delicious.</p>
<p>Naturally, you start with freshly brewed coffee. When you intend the pot to make iced coffee, you&#8217;ll want to make the brew a bit stronger than you would for hot coffee. The reason? When coffee is ice cold, the flavor is subdued. As soon as the pot is done, remove it from the warming tray and allow to cool slightly.</p>
<p>When cooled, pour the warm coffee into a one or two quart juice container and refrigerate. Make another pot of coffee, allow to cool and pour the unsweetened coffee into several ice cube trays. (When frozen, you can store in a large freezer bag and store until ready to use.) Using coffee ice cubes prevents your drink from becoming diluted with water.</p>
<p>When you make iced coffee, it&#8217;s best to make each serving individually when you&#8217;re adding cream, spices or other flavorings, for a truly fresh taste. Of course, you can serve &#8216;as is&#8217;, plain coffee and ice cubes, but there are several interesting variations.</p>
<p>For <strong>iced Mexican coffee</strong>, add to the coffee in the brewing basket a ½ teaspoon of cinnamon per pot. Proceed with the basic process described above. This drink is enhanced with a couple of tablespoons of whipped cream on top.</p>
<p>To make iced coffee which is quite close to those commercial Cappuccino drinks, for each tall glass, use a teaspoon of sugar with a dash or two of chocolate liqueur or those delightful Torani(R) syrups and half-and-half to taste. Most large supermarkets carry a good lineup of the Torani(R) syrups in flavors such as chocolate, vanilla and hazelnut, all of which go well with coffee. A small bottle of these syrups go a long way – just a tablespoon is sufficient for one beverage.</p>
<p>For a delicious after dinner iced coffee drink, try spiking your coffee with a couple of tablespoons of Kahlua(TM) and fresh whipping cream, straight from the carton to taste. Stir well. You can also make iced coffee that simulates Irish coffee, adding a tablespoon of Irish whiskey to a balloon style wine glass (to make room for the ice cubes) and topping with whipped cream. These iced coffee recipes also make great party beverages – but you&#8217;ve got to watch it – one or two glasses can sneak up on you!</p>
<p>So there you have several ways to make iced coffee to keep your coffee lovers happy all summer long. The procedure is simple, the ingredients economical and the taste delicious.</p>
